Spicy Roasted Mini Potatoes

These potatoes are easy to make and make a great side to eggs or veggie burgers. It took me a few attempts to get the proportion of herbs and spices right (although my son is adamant that it needs more salt).


  • 2 tablespoons olive oil

  • 1 bage (1.5 lbs) mini potatoes, halved (quartered for larger mini potatoes)

  • 2 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1/2 tsp oregano


  1. Pre-heat the oven to 400°F (200°C) degrees.

  2. Place the halved potatoes in a bowl, and toss them with the oil until evenly coated. Then, toss them with the dried herbs, spices, and salt.

  3. Place on a parchment-lined baking sheet and bake in the oven for 20 minutes, or until fork tender.

  4. For crispier, more golden brown potatoes, place them cut side down.
