This soup is delicious and easy to make. I make this recipe every few weeks and the kids have not grown tired of it (yet). It’s easily the best sweet potato soup I’ve ever had.
2 tablespoons olive oil
1 medium onion, chopped
1/2 pound carrots, peeled and chopped into 1-inch pieces
1 pound sweet potatoes (about 2 small), peeled and chopped into 1-inch pieces
4 cups vegetable broth
2 tablespoons honey
Freshly ground black pepper
In a large pot, heat the oil over medium heat. Add the onions and stir frequently until soft and translucent (around 5 minutes).
Add the sweet potatoes, carrots, and vegetable broth and bring to a boil. Cover and simmer over low heat until vegetables are soft, about 20 minutes. Mix in the honey and simmer for another 5 minutes.
Using a hand blender, puree the soup until smooth and creamy. Season to taste with salt, pepper and more honey if necessary.
Serve with some fresh bread and a nice sharp cheddar cheese!
