Kale, Cranberry & Apple Salad

This recipe gets an emphatic 2/4 rating: my wife and I love this salad but the kids aren’t too excited about it (yet). Prewashed and chopped kale is a huge time saver and it keeps well in the fridge for at least a week. This salad is pretty filling on it’s own or great with most meals.


  • 2 cups chopped, washed kale

  • 1/4 cup dried cranberries (or raisins)

  • 1/4 cup raw pumpkin seeds

  • 1/2 apple, cored and chopped into small pieces - I prefer a sweet variety like Gala

  • Brianna’s Poppyseed dressing


  1. Wash the kale. I know it’s pre-washed but an E. Coli infection would really ruin this dish.

  2. Add the dried cranberries, pumpkin seeds, and chopped apple.

  3. Add dressing and toss.
